Michael Pollan, author of The Omnivore’s Dilemma, makes an impassioned plea for a return to home cooking in his new book, Cooked: A Natural History of Transformation. He apprentices with some of the great masters in the arts of southern barbecue, bread-making, and all things fermented. Do we lose something as a culture when we no longer cook for ourselves? On the other hand, what’s wrong with leaving the culinary arts to the experts? What’s your relationship with cooking?
